Biography

Originally from Béarn, Yves Camdeborde learnt his trade in the largest and most prestigious hotels such as the Ritz, Tour D’Argent and, most specially, under the leadership of Mr Christian Constant at the Crillon.

His cuisine is personal to him with quality products for everyone. From the worker to the movie star, he wants to give everyone the opportunity to sample French cuisine in an atmosphere that reflects his image: friendly and warm.

He opened his first restaurant in 1992, The Régalade in the 14th arrondissement. For over 10 years this restaurant offered traditional cuisine and local flavours.

He then became the owner of the charming 4-star hotel Relais Saint Germain and Le Comptoir restaurant in the heart of Saint Germain des Pres, the Carrefour de l’Odéon. He proposes a “Bistrot Brasserie” kitchen which gives priority to market products, dishes and wines of character hoping to revive the tradition of French gourmet cuisine.

Very well known and having published several cookbooks, Yves Camdeborde was lately one of the judges on the famous show “Master Chef” broadcast on TF1.

He is now considered in France and worldwide as the pioneer and founder of the mixture of bistro cuisine and gastronomy: Bistronomie.
